When we were up at my parent’s house last week my dad barbequed some mouth watering delicious chicken. It just fell apart when you picked it up. Now it is my turn to give it a try… First I bought a pack of chicken legs at Costco today. I was going to get the whole chicken already cut and ready to go, but today at Costco they only had the individual kinds. So you had to choose between a monster size package of thighs, wings or legs. Since my son actually likes chicken legs I went with the monster size package of chicken legs.
First I turned the grill on high then came back inside to wash the legs. I seasoned them with garlic powder, onion powder, salt, pepper and lemon pepper. Right when I put them on the grill I turned it down to low. Then came back in to prepare the corn, wrapping them in foil with a little butter inside I went ahead and put those on the top rack of the grill.

For me cooking ribs has always been a challenge. I thought I had almost figured it out with our charcoal grill, but then we went and bought a gas grill. It is like learning how to cook all over again.
My first experience cooking on the gas grill was not a good one, but looking back on that day I realize it was my own fault. I have a 6 year old and an 11 month old. My six year old boy asked if he could go over to the neighbor’s house while I was cooking dinner. I said of course you can, this would give me to opportunity to figure out how to use this new grill. Well before you know it the 2 neighbor kids ages 7 and 3 are over at my house. Their dad thought it would be better if they came over to our house to play since he was about to start mowing the lawn. So now I have four kids in the yard! Instead of taking my time to slow cook these tasty baby back ribs. I turn the grill to high so I could just finish them. The two older kids were just fine playing in the yard, but the 3 year old was taking my rock garden apart, then I would turn around and he would have disappeared into the garage. Not to mention an 11 month old who is walking now and doesn’t want to be held while we are outside!

When my son was born he didn’t take to breast feeding right away. So for about a week I had to use a breast pump for his milk. I would put it into a little tube which rested at the end of my finger from there he would suck on that. Since he was born it seems I have been trying to figure out how to feed him, and feed him healthy. Right now he only likes certain foods rice, bread, pizza, and plain pasta that is about it. It is a chore to get him to try anything new. So this was my doctor’s advice. Three meals a day with three small snack in between. Only healthy snacks fruit, whole grain cereals – He said never force your kid to eat or turn it into a battle. If he doesn’t eat his dinner simply wrap it up with saran wrap and when the next snack time comes around offer it to him again. No grazing in between meals to ensure they are hungry.
So we will see how it goes - he hardly eats any food, but is very healthy runs and plays and has absolutely no problem with his energy level. I just want him to eat healthy and not eat junk food all day. It seems we had gotten into a pattern with unhealthy after school snacks, then come dinner he wouldn’t be very hungry so he wouldn’t eat much then at bed time he would have another snack. So I am working toward healthier snacks and healthier meals not only for him, but the whole family.

How to cook great chicken! We recently purchased a new gas grill. After cooking on a barbeque for so many years it has taken some getting use to on my part. I love the fact that I can just walk outside, turn the knob and it is ready for grilling. So far everything I have cooked on the new grill has been well not very tasty. This weekend I was at my dad’s house that also has a grill. We grilled up some chicken breasts which were absolutely wonderful. And this is how he did it:
First turn the grill on to high for about ten minutes and let the grill warm it. Meanwhile take your chicken breasts and put them in a big bowl mix with – salt, pepper, garlic salt, poultry seasonings, and lemon pepper. Go ahead and put them on the grill, turn it down to low and walk away. Didn’t even turn them or look at them for the first half hour, after that he mixed a ratio of half butter to half water with some seasonings and used that to baste the chicken. Cooking it for another hour turning it every once in awhile. So it took about an 1 ½ hours for the chicken to cook on low, but it was perfect!

As this site grows and evolves, new additions and tweaks are going to be made. I'm happy to report that we have some new changes up. The first obvious change is this blog. This blog will document some of my trials and tribulations with cooling and recipes and also document my daily challenges involved with cooking for my family.
